搬離倫敦縱使千萬個不願意,「遊牧」的日子在 Watford 以南的村鎮落腳兩個月,經驗倒是丁點不差,居住環境幽靜,治安良好,「街坊」們也既 decent 又友善;而外食生活雖遠不及倫敦多姿多彩,徒歩 12 分可達的 Bushey High Street 卻有一家水準極高的 St James,而且是 so good yet super affordable to the extent that many central-London French bistros ought to be put to shame!

去過 5、6 次,大部分時間都是吃平日午、晚餐適用的 set menu,吃午餐的話三道菜更只賣 GBP16.95,加埋 12.5% 也只是 HKD200 左右;以往在香港捱慣貴物價的我,簡直看得嘖嘖稱奇那。

第一次來頭盤想吃的 artichoke & onion tart,惟服務生說這當天沒供應,取而代之是 fried halloumi,問我有無興趣?我也當然沒所謂。Halloumi 芝士都是其獨有的 Q 彈、squeaky、鹹味及不錯奶香,但煎/炸成漂亮均勻的金黃色,吃下又香脆不油膩,也實在不得不讚呢。橙紅色的是 romesco 醬汁,細滑而帶淡淡椒味屬預料之內;蘑菇則已被烤至收乾水份,賣相甚至帶點皺皮,吃起來倒不會乾,同時菇香又超超超濃郁,正呀。

Squid - baby squid served on creamy bagna cauda sauce (anchovies & garlic), red peppers and pea veloute:碟底的 bagna cauda 醬汁比預期淡麗,魷魚倒是軟熟又鮮香 briny,不錯。面頭紅尖椒有燒過的微焦痕跡,平日對椒類恨之入骨的我倒是照吃可也,吃罷也並不抗拒 — 或許因為它並不是燈籠椒,所以沒那種討厭的澀味吧,嘿嘿。

另一次的魷魚件頭增大了,吃下倒不失香嫩;紅椒沒了 char,但換來浅漬け過的酸甜,我吃完也仍不抗拒,呵呵。

Pea and watercress soup served with cream 入口非常細滑,青豆味濃郁得來清甜無比(註:i.e. 急凍三色豆那些青豆常見的青腥味並沒存在,OK?),細嚐還好像隱約帶新鮮薄荷葉的香味,喜歡啊。

吃 à la carte 的一次點了 goat cheese - goat cheese pearls, smoked black garlic, confit heritage and tomato water (GBP8)。本來以為羊芝士會是硬身 feta 的格式,上檯的卻接近 mousse 質地多於 crumbly 狀,口味也沒預期鹹,但不失香味;黑蒜 mousse 賣相有點像黑橄欖,吃下則 nutty 甜香,與酸酸甜甜的多色 tomato confit 同吃,很夾啊!作為芝士類頭盤,這一味整體也沒預期膩,幾好吃。

大蝗蟲的 smoked salmon, fennel salad, cucumber and avocado cream 我試了牛油果醬及少量三文魚,後者品質不錯,鹹甜有致,口味蠻細膩的;前者也的確呈「忌廉」的形態,空口吃倒是偏淡身,看來其存在價值主要是為三文魚增添滑溜吧。

另一次的是 citrus cured salmon served with mint yogurt, fennel puree and avocado stuffed cucumber,三文魚依舊鹹甜有致,不過這一道的青瓜 influence 較多,吃起來也更清新,是真正「夏天來了」的感覺啊,嘿嘿。

Beef tartare modigliani, served with crispy capers, roasted baby onion, quail's egg, picalilly sauce and red pepper culi (GBP9) 是 à la carte 限定,生牛肉調味不重,但剁得很鬆、很輕巧,而且很新鮮的感覺,小試牛刀印象良好。

第一次來選了 calves liver served with green beans, braised cabbage, mashed potatoes and red wine jus 作主菜,點菜時服務生不忘單聲這會是 medium 並向我確認是否可以,我當然沒異議吧。牛仔肝切開後倒是全熟,幸而吃起來質地仍帶爽而不會粉粉的或有苦澀,OK 啦。椰菜餐牌寫著是 braised,上檯的倒是切成 shredded 狀,吃起來帶爽,而且有烤過/高溫少油炒過的微微焦香,不過口味說比預期鹹了一點點。碟底的薯茸也不錯,入口頗滑,牛油香更是超勁喎。

Fish pie - salmon, sea bass & haddock pie served with mix vegetables 賣相頂級漂亮,可惜薯茸脆面香口有餘,調味卻失衡,好鹹喎喂!底層的忌廉 fish mix 倒是很好吃,非常足料,且有陣陣百里香、刁草加深香味層次,喜歡啊。旁邊的蒸/烚 greens 就有點鳩,西蘭花超 mushy 的,法邊豆也太腍,可以不試。

Stuffed black trumpet chicken breast served with crispy polenta, sweetcorn, spring onion, paprika oil:so far 在英國吃雞胸的經驗大致不差,這裡的卻完全是超晒班,超嫩、超濕潤,正!Stuffing 薄薄一層,口味頗 herby,可惜不大嚐到菇味。配菜裡的粟米以粟米粒、爆谷及炸 polenta 三種形態呈現,而「三食」當中我最喜歡 polenta,炸得幾鬆脆,粟米糊也幾香,好吃!爆谷也鬆脆,而最簡單直接的粟米粒反而最遜色,「衣」有點韌耶。還有碟邊橙色的 paprika 油,竟是酸酸甜甜的,有點意想不到。

Pan-fried John Dory served with saffron mash, salsa verde, peas & leeks fricasee:魚柳煎得香脆,肉卻同時 flaky 又嫩滑,而本身下鹽頗輕手,空口吃會略淡,不過配上鹹鹹脆脆的 samphire 同吃,就剛好了。番紅花薯茸呈螢光黃色(!),質地頗細滑,甜香強勁,甚至甜得有進化成南瓜茸的印象;再加上碟底的青豆也是偏甜,感覺總是怪怪哋,哈哈。

Sea bass - pan-fried sea bass served with romesco sauce, confit tomatoes, roast new potatoes, olive tapenade and basil oil 同樣煎至皮脆肉嫩,也同樣下鹽輕手,但同樣配上鹹鹹的 samphire 後就剛好了。旁邊有黑、紅兩款醬汁,olive tapenade 是 purée 來的,鹽漬黑橄欖的味道幾濃吓;對椒類恨之入骨的我而言,romesco 醬汁的椒味屬「可以忍受」(bearable),哈哈。話時話,兩款醬汁也 sieve 得非常細滑,廚房團隊真的很用心啊。

Duck - pan fried duck breast, duck croquette, stuffed carrot with spiced carrot purée, served with blackcurrant jus (GBP19.95) 是吃 à la carte 晚餐的主食。聽了服務生的意見選了 medium,上檯賣相比預期熟,吃下卻是超•級•軟•嫩,肉味也不 gamey 又不會臊,正呀喂!醬汁是黑加侖子及肉汁,增添了酸酸甜甜,與鴨肉也很夾。配菜方面,紅蘿蔔是開邊後釀了紅蘿蔔 purée(!),後者細滑帶陣陣八角的辛香,不論是獨立吃還是配鴨肉同吃,同樣美味呢。

Duo of lamb - lamb cutlet, rump of lamb, burned onion, hasselback potatoes, pea veloute and lamb jus (GBP22) 肉質就好得多,medium 的羊架超嫩啊!羊味倒是沒預期香濃,或許因為肥脂不多吧。

C 太太的 haddock, creamy mash, samphire, poached egg and potato tuile served with wild garlic sauce (GBP19.95) 我也試了一點點,薯茸幼滑有薯香,魚肉 flaky、嫩身,有微微鹹香及煙燻香,配上 samphire 後 brininess 更上一層樓,好吃。

另一次的 affogato - single espresso and vanilla ice cream 是貪得意叫的,雪糕算是香滑吧,espresso 卻是有點稀,可惜。

Strawberry & cream - fresh strawberry, strawberry ice cream and Chantilly cream 是士多啤梨、士多啤梨雪糕、crème Chantilly 及煮過的黑莓,士多啤梨酸甜有緻,士多啤梨雪糕也香滑天然,英國初夏吃英國士多啤梨真是無得輸!Blackberry compote 也酸香開胃,crème Chantilly 則蠻挺身的,入口質地也比預期杰,質地介乎 clotted cream 與 mousse 之間,味道則就是「甜奶」的味道。嗯,以前我從來不會主動 order 有莓類水果的甜品,這裡的卻甚對胃口,吃得滿意啊。

Salted caramel & chocolate tart 我試了一點點,卻是既不夠朱古力濃香,又嚐不到 salted caramel 的甘甜,朱古力 ganache 還要是實實的,麻麻哋。

Chocolate fondant with vanilla ice cream (GBP6.5) 是 à la carte 之物,朱古力蛋糕屬熱烘烘、軟心而不會流到成隻碟都係朱古力漿,朱古力味超香濃、超 dark 的,小試後印象很好啊。

還有 Irish coffee - a caffeinated alcoholic drink consisting of Irish whiskey, hot coffee, sugar and topped with cream (GBP7.95),店方是咪忘了唧忌廉喺面啦?喝起來就是一杯沒啥酒精感、不太甜又有點薄身的普通奶啡,不值一試。

吃 à la carte 又因為開了一瓶 Châteauneuf-du-Pape Héritage de J.M. Calvet 2020 紅酒 (GBP39.5) 所以最貴的一次埋單每人 GBP49.6,食物用心又美味(註:that said, 鹹食倒是比甜品出色得多),服務更是周到得沒話說,我覺得即使它開在倫敦市中心也丁點不輸蝕,值得支持啊。
